鐵是容易生鏽的金屬,裡面含有炭導致更容易生鏽,顧客買回家後必須先做開鍋動作。
- 第一次使用前,直接放在爐火上空燒。 可用大火燒鍋,過程中會發現鍋身顏色改變(先是變黑又恢復原色),要注意不可發紅也不可冒煙,則是鍋子即將燒壞的先兆。待鍋子由原色燒至黑色再燒至原色時即可離開爐火
- 要趁熱用鐵刷用力刷,將表面塗層刷去,(做這動作絕不可加水) 刷過的鍋子,再次放置爐火上,(火不要大保持熱度即可),倒入食用油旋轉鍋身,使鍋面全部被食用油滋潤。
- 把油脂倒掉,用紙巾擦去多餘油脂,即完成第一次養鍋
- 再把鍋子置於爐火上,重複第一次燒鍋過程。 第二次刷鍋時,要先離火幾分鐘後,置水龍頭底下用鐵刷用力刷去油脂。
- 再次放到爐火上燒去水分,置入油脂重複潤鍋動作。倒掉潤鍋的油,用紙巾擦掉多餘油份,即完成第二次養鍋。
- 重覆做第三次的養鍋後,要把整支鍋都擦上油脂,整個養新鍋的動作才算大功告成。
